FROZEN YOGURT BARK WITH BERRIES


Happy Monday!

Starting the week with a great healthy snack idea! This delicious frozen yogurt bark is made with only a few ingredients and it is very easy and quick to make!

I used greek yogurt but feel free to use any kind of yogurt. I also sweetened with yacon syrup but you can actually use stevia or honey or sweetener of choice.

I love the combination of berries with yogurt, I have that a lot of times as snack throughout the week! Which berry do you like the most? My favourite are blueberries and strawberries!

DIABETIC DIET TIP

These healthy and delicious snack is a great idea for diabetics and non-diabetics! It is specially better in summer since it is frozen.

The sugar content in this healthy snack recipe is very low. Did you know berries are one of the fruits with less sugar content? They’re the only fruits “allowed” in a ketogenic diet for a reason!

So this sweet recipe is indeed a great choice as a snack or dessert any time of the day. Be sure to always have stable blood sugar levels before starting to eat your meal or snack (around 90-120 mg/dL).

INGREDIENTS

  • 2 cups or 350gr of plain yogurt

  • 1/4 cup yacon syrup (honey or maple syrup are also OK to use if you don’t mind the sugar content)

  • 1/2 teaspoon of pure vanilla extract

  • 1/4 teaspoon of fresh lemon juice

  • strawberries, sliced

  • blueberries

  • raspberries

  • vanilla protein granola or chocolate protein granola or granola of choice


STEPS

  1. Line a baking sheet with parchment paper and set aside.

  2. In a large mixing bowl combine yogurt, yacon syrup, vanilla, lemon juice, and whisk until thoroughly combined.

  3. Transfer yogurt mixture to previously prepared baking sheet and spread it around to an even thickness. 

  4. Top with berries and garnish with nuts (optional)

  5. Freeze for 2 to 3 hours, or until firm.

  6. Cut into pieces and serve.

* Store in the freezer.

Delicioso y saludable snack para cualquier momento del día! Muy fácil de hacer con pocos ingredientes que seguro tenéis en casa! Os gustan los frutos rojos? Cuál es vuestro favorito?

INGREDIENTES

PASOS

  1. Poner papel de horno en una bandeja.

  2. En un bol, mezclar el yogur con el sirope de yacón, la vainilla, y el zumo de limón.

  3. Verter y esparcir sobre la bandeja hasta que quede uniforme y del grosor que queráis, yo he hecho medio centímetro aprox.

  4. Cubrir con fresas troceadas, arándanos, frambuesas y granola.

  5. Dejar en el congelador durante 2 horas o hasta que esté duro.

  6. Trocear y consumir o guardar en el congelador.

* Conservar en el congelador
