PISTACHIO PROTEIN COOKIES
Delicious PROTEIN pistachio cookies with white chocolate chips that are low carb, gluten free and refined sugar free! It’s the protein version of these healthy pistachio cookies.
I personally can’t live without cookies… So at least is much better to eat cookies that are going to nourish your body! I know white chocolate is not the healthiest option, so feel free to substitute with dark chocolate chips. I personally love the pistachio-white chocolate combo!
These healthy pistachio cookies are deliciously made with almond flour, coconut sugar, pistachios and have some white chocolate chips inside... because pistachio and white chocolate combo is AWESOME!
These healthy cookies are low carb, gluten free, refined sugar free and very easy to make! Besides, they are high in protein content as well!
As you will see throughout all my healthy recipes, I either use grass-fed butter or coconut oil and it will always depend on wanting the butter flavour or not…
DIABETIC DIET TIP
Even though these healthy cookies have some white chocolate chips, since they are also made with good fats from almonds, pistachios and grass-fed butter, you won’t experience the sugar spike you would have when eating any regular refined cookies made with refined sugars and wheat!
Pistachios contain healthy fats and are a good source of protein, fiber and antioxidants!
I hope to share more about particular brands and what to look for on labels, to show how the food industry can actually fool you!
INGREDIENTS
1 cup or 95gr of almond flour
2 scoops or 60gr of protein powder (preferably vanilla flavor)
1 teaspoon pink Himalayan salt
1/2 cup raw pistachios, chopped
1/2 cup or 75gr of grass-fed unsalted butter or coconut oil
1 teaspoon vanilla extract
1/2 cup or 70gr of coconut sugar
1 organic egg
Optional: 1/2 cup good quality white chocolate chips
STEPS
Preheat oven to 350F/175C
Mix together the butter/oil, coconut sugar, egg and vanilla in a food processor or hand mixer until completely creamed together.
Add the almond flour, protein powder and salt. Leave out the sea salt if your pistachios are salted.
Mix until everything is combined. You can also do this with a spatula.
Transfer to a bowl and fold in the chopped pistachios and white chocolate chips.
Make little balls and place onto a lined baking sheet and bake for 15 minutes.
Allow the cookies to cool for 15 minutes on a cooling rack.
* Makes about 16 cookies
* Store in an air tight container at room temperature or fridge for 1 week.

Estas galletas proteicas de pistacho están deliciosas! Os gustan los pistachos? A mi me encantan, y la mayoría de veces que uso pistachos en mis recetas, combino con un poco de pepitas de chocolate blanco… porque me encanta ese combo!! El chocolate blanco no es la mejor opción, pero un poquito no hace daño verdad? :P
INGREDIENTES
1 taza o 95gr de harina de almendra
2 scoops o 60gr de proteína en polvo (de sabor vainilla mejor)
1 cucharadita de sal rosa del Himalaya
1/2 taza de pistachos crudos, troceados
1/2 taza o 75gr de mantequilla de vacas de pasto sin sal añadida o aceite de coco
1 cucharadita de extracto de vainilla
1/2 taza o 70gr de azúcar de coco
1 huevo ecológico
Opcional: 1/2 taza de pepitas de chocolate blanco de buena calidad
PASOS
Precalentar el horno a 175C.
Batir la mantequilla con el azúcar de coco, huevo y extracto de vainilla.
Añadir la harina de almendra y sal. No añadir sal si los pistachos son salados.
Mezclar todo junto y añadir los pistachos y las pepitas de chocolate blanco.
Hacer bolitas y colocar en una bandeja con papel de horno. Hornear unos 15 minutos.
Dejar que se enfríen en una rejilla por lo menos unos 15 minutos.
* Salen unas 16 galletas.
* Conservar en un recipiente hermético a temperatura ambiente o en la nevera durante 1 semana.
