HEALTHY PROTEIN CHOCOLATE BARS
It’s Wednesday and I needed a quick and healthy snack for today so yesterday I made these healthy raw vegan protein bars in only 10 minutes!
These healthy raw protein bars are very easy and quick to make! You can make them thicker if you prefer otherwise they will brake easily.
They’re gluten free, refined sugar free, dairy free, paleo and vegan! Wohoo!
All the ingredients are healthy except for the white chocolate chips… I know, I can’t help it to use white chocolate chips sometimes…!! But feel free to use dark chocolate chips instead to make them with less sugar content.
DIABETIC DIET TIP
These protein bars are the perfect snack AS LONG AS your sugar levels are stable or about to start going down (80 mg/dL and going down!). The reason is, these protein bars have a small amount of white chocolate, small but is still white chocolate!
Therefore, always remember that in a high sugar situation, do not consume sweets that contain ingredients that might prevent to stabilize your blood sugar.

INGREDIENTS
1/3 cup or 25gr of cacao powder 100%
1 scoop or 30gr of vanilla protein powder
2 scoops or 60gr of chocolate protein powder
2 tablespoons of coconut flour
1/3 cup of almond butter
1 tablespoon of yacon syrup
2-3 tablespoons of water (if your dough is too dry)
Optional: white chocolate chips or topping of choice
STEPS
In a bowl, mix all the dry ingredients (cacao, protein powder and coconut flour). Set aside.
In another bowl, mix the rest of the ingredients and mix it with the previous mixture until it becomes a dough.
Press evenly into a square mold with parchment paper and refrigerate.
You can add topping of choice, I used white chocolate chips…
* Store them in the fridge for 1 week or freeze them.

Estas barritas proteicas veganas son muy fáciles y rápidas de hacer. Es una opción de snack saludable perfecto para tener durante la semana. Un dulce que está muy rico y además te nutrirá!
INGREDIENTES
1/3 taza o 25gr de cacao en polvo 100%
1 scoop o 30gr de proteína de vainilla
2 scoops o 60gr de proteína de chocolate
2 cucharadas de harina de coco
1/3 taza de crema de almendras
1 cucharada de sirope de yacón o miel
2-3 cucharadas de agua (si la masa es demasiado seca y se rompe)
PASOS
En un bol, mezclar los ingredientes secos (cacao, proteína en polvo y harina de coco) y reservar.
En otro bol, mezclar el resto de ingredientes y añadir a la mezcla anterior.
Mezclar todo junto hasta conseguir una masa con la que trabajar, poner en un molde cuadrado apretando con los dedos hasta que quede uniforme y dejar en nevera al menos 2 horas.
Podéis añadir el topping que prefiráis, yo he usado pepitas de chocolate blanco...
* Conservar en nevera durante 1 semana o congelarlas
