HEALTHY ADZUKI BROWNIE


Happy Tuesday!! If you are the type of person that absolutely loves brownies, this one is for you!!

This healthy flourless brownie is made with a secret ingredient…adzuki beans! And of course, real chocolate (cacao)! Not only that but I am proud to say this healthy brownie is gluten-free, refined sugar free, dairy free and vegan! Such a combo!!

The best thing about this healthy recipe, is that it is super easy to make so I made sure everyone is able to follow step by step while enjoying the baking process… and believe me, the process is very fun!

For the beginners in this blog, something I love doing while baking that I believe will help you a lot is to sample the different steps throughout the process to make sure they have the flavour and tastefulness I am looking for. This little tip will change your baking experience, trust me!!

This healthy brownie is the perfect healthy sweet anyone can eat during weekdays or weekends as a snack or dessert and will still nourish you!

DIABETIC DIET TIP

This healthy brownie contains a mix of healthy fats from the almonds and the coconut oil and carbohydrates from the adzuki beans. So it has carbohydrates yes, but from a legume, not from a grain.

Adzuki beans are rich in protein, fiber, vitamins, minerals and beneficial plant compounds. Soaking, sprouting and fermenting makes it easier to absorb these nutrients! This is why you have to soak the legumes at least 24 hours before cooking them (I personally prefer to soak them 48 hours).

This healthy brownie will satisfy your sweet tooth and will certainly maintain your blood glucose levels as long as they are stable from 80-120 mg/dL.

INGREDIENTS

▪️1 & 1/2 cups adzuki beans (soaked at least 24hs and then cooked)
▪️1.75oz/50g chocolate 80% bar or chunks
▪️1/2 cup or 40gr of unsweetened cacao powder 100%
▪️1/3 cup or 55gr of coconut oil
▪️1/4 cup of almond butter
▪️1 tablespoon of vanilla extract
▪️1/4 cup or 30gr of coconut sugar
▪️1/2 cup of dark chocolate chips


STEPS

▫️Preheat oven at 350F/175C. Cover a 8inch/20cm square mold with parchment paper.
▫️Blend the cooked adzuki beans completely with vanilla extract and melted coconut oil, until it becomes a smooth paste. If it’s too much quantity, divide by half and blend it in portions.
▫️In a bowl, melt the dark chocolate and mix it with the coconut sugar and the almond butter.
▫️Add the cacao powder and mix everything together.
▫️Add chocolate chips and pour the batter into the mold.
▫️Bake for 15 minutes and let it cool on a rack.


* Store in an air tight container in the fridge for up to 1 week. You can also freeze into portions.

Brownie de chocolate sin harinas, hecho con legumbres azukis!!

Os aseguro que ni se nota que esta hecho con legumbres! Tiene el mismo sabor intenso a chocolate que un brownie normal!

Las legumbres azuki tienen un alto contenido de proteínas, fibra, minerales y vitaminas. Por eso es fundamental remojar las legumbres al menos 24 horas antes de cocinarlas, así vuestro organismo podrá digerir y absorber mucho mejor estos nutrientes!

INGREDIENTES

▪️1 & 1/2 tazas de legumbres azuki (remojadas al menos 24 horas y luego cocinadas)
▪️50g de chocolate negro 80% (derretido)
▪️1/2 taza o 40gr de cacao en polvo 100%
▪️1/3 taza o 55gr de aceite de coco
▪️1/4 taza de mantequilla de almendra
▪️1 cucharada de extracto de vainilla
▪️1/4 taza o 30gr de azúcar de coco
▪️1/2 taza de pepitas de chocolate negro

PASOS

▫️Precalenrar horno a 175C. Poner papel de horno en un molde cuadrado de unos 20cm.
▫️Triturar las legumbres cocinadas con el aceite de coco derretido y el extracto de vainilla. Si es mucha cantidad, dividirlo y triturar en porciones.
▫️Derretir el chocolate y mezclar con el azúcar de coco y la mantequilla de almendras.
▫️Añadir el cacao en polvo y mezclar todo bien.
▫️Añadir las pepitas de chocolate y verter la masa en el molde.
▫️Hornear 15 minutos y dejar enfriar en una rejilla.

* Conservar en un recipiente hermético en la nevera durante una semana: También podéis congelar trozos.
