Healthy Soft and Chewy Protein Almond Cookies!

These healthy protein almond cookies are very easy and quick to make! The fact that you only need 4 ingredients makes them a great healthy choice for a quick snack prep!

This easy healthy recipe for soft and chewy cookies is a keeper! So much flavor in every bite, you won’t believe how good they are! Plus, these paleo cookies are unbelievably easy to make.

And for variation, you can add chocolate chips, coconut flakes, raisins or any kind of nuts!! I personally love chocolate chips (since I am a chocolate lover), but they can be mixed with all of the above to give an extra boost of sweetness.

These healthy protein almond cookies are gluten free, refined sugar free, dairy free and Paleo!!!

DIABETIC DIET TIP

These healthy protein almond cookies are a great option as a snack any time! The macro-nutrients in these healthy cookies are the following:

  • 7 gr of net carbohydrates

  • 6 gr of sugars

  • 11 gr of healthy fats.

Quick Note: If you make the original healthy recipe without adding the protein powder, the protein content is 6 gr per cookie. If you do add 60 gr of protein powder as my original healthy recipe below, the protein content will rise to 10gr per cookie! That’s awesome!

The protein content won’t make a big difference in your blood sugar levels, as you can see in both cases the sugar and carbohydrate content remains the same, which is great!
Since the fat content is the main macronutrient in these healthy cookies, the sugar content won’t cause you blood sugar spikes!

If I were you, I would try to make these cookies both ways and see which one you prefer! We would love to know your feedback!

INGREDIENTS

  • 1 cup almond butter

  • 1/2 cup or 70gr of coconut sugar

  • 1 organic egg

  • 1/2 tablespoon of vanilla extract

  • Optional: 1-2 scoops (30-60gr) of protein powder if you want to add protein content to the cookies. I added 1 scoop of vanilla protein powder to the regular cookies and the consistency was as expected (see pictures). Then I also added another scoop of chocolate protein powder and the consistency was more dense, and the cookies were more dry (see pictures, the chocolate cookies)


STEPS

  1. Pre heat oven to 350F/175C.

  2. In a bowl, whisk the egg and cream together with the almond butter and the vanilla extract.

  3. Add the coconut sugar and mix until fully combined. As an option you can add 1-2 scoops of protein powder, I explained in the ingredients section above the result.

  4. Roll the dough into 1.5inches/3cm balls, and place on a cookie sheet with parchment paper. Using the base of your palms or a fork, slightly flatten the balls to about 1/2 inch/1cm thick.

  5. Bake for 10 minutes or until the edges begin to brown.

  6. Remove the cookies from the oven and let them cool at least 10 minutes.


* Store the cookies in an air tight container at room temperature to keep them chewy, if you keep them in the fridge they will dry a little..

🇪🇸 Spanish:

Galletas de almendra super tiernas! Son muy fáciles de hacer, sólo necesitáis 4 ingredientes!

Éstas deliciosas galletas de almendra no llevan gluten, ni lácteos, ni azúcares refinados! También son aptas para una dieta Paleo!

INGREDIENTES

  • 1 taza de mantequilla de almendra

  • 1/2 taza o 70gr de azúcar de coco

  • 1 huevo ecológico

  • 1/2 cucharada de extracto de vainilla

  • Opcional: 1-2 scoops/cazos (30-60gr) de proteína en polvo si queréis que las galletas tengan proteína. Yo he añadido 1 scoop de proteína de vainilla y la consistencia ha sido la esperada (ver fotos). Luego he añadido 1 scoop de proteína de chocolate y las galletas de chocolate han quedado más secas y densas.

    PASOS

  1. Pre calentar el horno a 175C.

  2. En un bol, batir el huevo y mezclar con la mantequilla de almendra y el extracto de vainilla.

  3. Añadir el azúcar de coco y mezclar hasta que quede todo bien integrado. Como opción podéis añadir 1 scoop de proteína en polvo, he explicado el resultado en la parte de ingredientes de arriba.

  4. Hacer bolitas de 3cm aproximadamente y colocar en una bandeja con papel de horno. Con la base de la palma de la mano o con un tenedor, apretar suavemente para aplanar las galletas, deberían tener un grosor de 1 cm mas o menos.

  5. Hornear 10 minutos o hasta que los bordes de las galletas estén dorados.

  6. Retirar las galletas del horno y dejar enfriar al menos 10 minutos.

* Conservar en un recipiente hermético a temperatura ambiente, si las dejáis en la nevera se endurecerán demasiado.
