VEGAN ORANGE & BERRY CHOCOLATE TART (NO-BAKE)

Happy last days of this 2021 and most importantly, last bake of the year! Let’s finish this 2021 with a delicious tart that will impress all your friends and family. I wanted to share with you this amazing vegan orange and berry chocolate tart recipe because it is a very simple recipe made with very few ingredients you can easily have available at home as well as being a no-bake tart!

You would never guess the main ingredient in this tart… tofu! Yes, the same tofu you would eat at any other regular meal is the one I have used for this delicious and healthy tart! This no-bake tart can be done with lots of different types of crust so feel free to choose the cookie of you choice or make this crust from my Tart Crust Recipes.

This amazing healthy dessert recipe not only is vegan but also refined sugar free, dairy-free and gluten-free. Enjoy!

DIABETIC DIET TIP

During the holidays and specially being diabetic, it is very important to watch your food intake, specially when it comes to sweets. With the amount of food constantly surrounding us during this time of the year, it is extremely easy to let yourself go. This is why this tart can help you offset some of the craving for the traditional christmas treats which are full of refined sugars.

The combination of the ingredients used on this tart, specially the healthy fats, will provide a slower digestion which will result in keeping you full for a longer time as well as preventing sugar spikes.

Therefore, a quick tip is to start your dessert journey snacking a bite or two from this amazing chocolate tart and you will be full already! This will result in you craving less for the ¨bad stuff¨.

Healthy Chocolate Tart

INGREDIENTS

For the chocolate crust:

  • 300gr cookie of choice melted with 30-50gr of melted grass-fed butter or coconut oil

    Or

  • Crust from any of these Tart Crust Recipes

For the Chocolate Orange Filling:

  • 350gr firm tofu (at room temperature)

  • 200gr dark chocolate (I used at least 85% cacao)

  • 1 teaspoon orange extract

  • optional: 50ml orange juice

  • 1/2 tablespoon of stevia

For the Chocolate Orange Ganache:

  • 100gr dark chocolate (I used at least 85% cacao)

  • 3 tablespoons heavy cream or milk of choice

  • 1/4 teaspoon orange extract


STEPS

  1. For the crust. If you use a cookie of your choice just blend it and mix with the butter/oil and press evenly on a 9inch/22cm round tart mold. Set aside.

  2. Cut the firm tofu in some pieces and blend in a food processor together with the orange extract (and orange juice if you want to add it) until completely smooth. Transfer to a bowl.

  3. Melt the dark chocolate and pour into the blended tofu. Mix well until fully incorporated. If the tofu has not been at room temperature and it’s cold, when you add the melted chocolate the mixture will harden quickly. If that happens, just put the bowl in the microwave for 20 seconds and it will be smooth again.

  4. Pour the mixture on top of the crust and set aside.

  5. For the ganache, warm the heavy cream or milk and add the dark chocolate. Mix until is fully combined and the chocolate is completely melted. If necessary, put in the microwave for short times to melt it quicker.

  6. Pour the ganache on top of the tofu filling and with a spatula, spread evenly all over until it covers the tart till the cookie edges. You can also do a spiral decoration like I did with the spatula!

  7. Add your decoration of choice on top. I decided to decorate the tart with berries and the combination was great!


* Store in the fridge for 1 week or freeze pieces.

Ya se acaba el 2020 y con él os traigo la última receta del año! Una tarta de chocolate vegana en la cual he usado un ingrediente que no se nota en absoluto el sabor y da una textura ideal!!

Esta tarta es fácil de hacer, no requiere horno y estoy segura que tienes todos los ingredientes necesarios para hacerla en tu casa, hoy mismo!

No lleva gluten, ni lácteos ni azúcares refinados y además es vegana!

Con muchas ganas de empezar este 2021, gracias por este año a tod@s los que me siguen y leen por aquí y comparten mis recetas!!!


INGREDIENTES

Base:

  • 300gr de tu galleta preferida mezclada con 30-50gr de mantequilla de vacas de pasto o aceite de coco

    O

  • Base de cualquiera de mis Recetas de Tartas

Relleno de Chocolate y Naranja:

  • 350gr tofu firme (a temperatura ambiente)

  • 200gr chocolate negro (al menos del 85%)

  • 1 cucharadita de extracto de naranja

  • Opcional: 50ml de zumo de naranja líquido

  • 1/2 cucharada de estevia en polvo

Ganache de Chocolate y Naranja:

  • 100gr chocolate negro (al menos del 85%)

  • 3 cucharadas de nata o leche que quieras

  • 1/4 cucharadita de extracto de naranja líquido


PASOS

  1. Para la base. Si usas la galleta que prefieras, simplemente tritura y mezcla con la mantequilla/aceite y aprieta firme y uniformemente en la base de un molde redondo de 22cm. Reservar.

  2. Para el relleno. Cortar el tofu en algunas partes y triturar en una procesadora de alimentos o trituradora de mano junto con el extracto de naranja, el zumo de naranja si lo quieres usar) y la estevia. Pasar a un bol.

  3. Derretir el chocolate negro y mezclarlo con el tofu hasta que quede bien incorporado. Si el tofu no está a T ambiente y está frío, cuando añadas el chocolate derretido se va a endurecer de nuevo. Si eso pasa, pon el bol en el microondas durante 20 segundos y volverá a tener textura suave.

  4. Verter la mezcla por encima de la base de galleta, asegurarse de que toda la base de galleta queda cubierta..

  5. Para la ganache, calentar la nata o leche y añadir el chocolate negro. Mezclar hasta que quede bien incorporado. Si es necesario, poner en el microondas por períodos cortos de tiempo para que se derrita más rápido.

  6. Verter la ganache por encima del relleno de tofu y esparcir uniformemente con una espátula hasta los bordes de la base de galleta. Puedes hacer una espiral como yo hice para darle un toque más decorativo.

  7. Añadir el topping que quieras. Yo he escogido frutos rojos y la combinación es ideal con el toque de naranja en el chocolate!

* Conservar en la nevera durante 1 semana o en el congelador en porciones.
* Si te sobra relleno de tofu y chocolate como me pasó a mi, puedes hacer estas trufas de naranja y chocolate deliciosas!
