HOMEMADE PROTEIN COOKIE CRUMBLE

A simple and easy recipe to make your own crumble!
Who doesnβt like cookie crumble? You can add it to lots of desserts and sweet snacks! Even with just yogurt or in a smoothie gives a great touch. I personally need to have something crunchy together with my yogurt, so adding a couple of spoons of this crumble itβs perfect!
Needless to say itβs gluten free, dairy free, sugar free, protein rich and vegan! Yay!!

This is a great option to add something crunchy and sweet to any snack!
Itβs made with almond flour and coconut flour and no added sugar. To add sweetness I used my vanilla protein powder, but if you donβt want to add protein just use stevia or erythritol in order to make it sugar free. If you donβt want to use sweetener then choose coconut sugar.
Anyhow, this healthy crumble will not spike your sugar levels as long as theyβre stable (between 80-120mg/dL) thanks to the healthy fat content and no added sugar.
INGREDIENTS
1/3 cup almond flour
2 tablespoons coconut flour
1 scoop or 30gr vanilla protein
35gr coconut oil
1/4 teaspoon Himalayan pink salt or salt of choice
* If you donβt want to add protein, you can omit it and only use 25gr of coconut oil and stevia or erythritol to add sweetness.
STEPS
Preheat oven at 350F/175C.
Mix all the ingredients together except the coconut oil.
Add the melted coconut oil and mix with a spoon. Then use your fingers and work the dough, it should form crumbles like in the pictures.
Spread over a tray with parchment paper and bake for 10 minutes or until golden brown.
Remove from the oven and let it cool. Once cooled, store in an air tight container and use it as a topping on your smoothie, yogurt or snack of choice!
* Store in an air tight container at room temperature or fridge.

ΒΏA quiΓ©n no le gusta un crumble de galleta? Esta receta fΓ‘cil y rΓ‘pida es ideal para tener siempre a mano algo crujiente que aΓ±adir a los postres o snacks dulces que mΓ‘s os gusten.
A mi personalmente me encanta aΓ±adir 2 cucharadas de este saludable crumble de galleta a mi yogur!
Una manera de tener algo crujiente, con sabor a galleta y sin gluten, sin lΓ‘cteos, sin azΓΊcares, con proteΓna y vegano! ΒΏQuΓ© mΓ‘s se puede pedir?
INGREDIENTES
1/3 taza de harina de almendra
2 cucharadas de harina de coco
1 scoop o 30gr de proteΓna de vainilla en polvo
35gr de aceite de coco
1/4 cucharadita de sal rosa del Himalaya
* Si no querΓ©is usar proteΓna en polvo, entonces solo usar 25gr de aceite de coco y estevia o eritritol para endulzar
PASOS
Pre calentar el horno a 175C.
Mezclar todos los ingredientes juntos excepto el aceite de coco.
AΓ±adir el aceite de coco derretido y mezclar con una cuchara. Luego usar las manos hasta que se desmenuze la masa.
Esparcir sobre una bandeja con papel de horno y hornear durante 10 minutos o hasta que se empieza a dorar.
Retirar del horno y dejar enfriar. Una vez enfriada, ponerla en un recipiente hermΓ©tico y usar como topping en yogures, smoothies o el snack que mΓ‘s os guste!
* Conservar en un recipiente hermΓ©tico a temperatura ambiente o en la nevera.
