HEALTHY PISTACHIO FINANCIERS


Have you ever tried FINANCIERS? Financiers are small French almond cakes moistened with butter. I have always loved them so I made a healthier version of them! There are different types and one of them is with pistachios, my favorites!!

These healthy pistachio financiers are delicious!! We had to control ourselves to not eat them all! They’re so tiny you won’t realise you can eat a big quantity. Be careful!!

DIABETIC DIET TIP

I think it’s a great idea to bring these healthy Pistachio Financiers to the table anytime! It’s the perfect healthy dessert recipe that all of you can enjoy in small amounts.

The sugar content is low, unless you add to much white chocolate. You can indeed omit adding white chocolate or substitute for dark chocolate (much better!) I just can’t help it sometimes and I like to add that white chocolate touch and when I do, I use the sugar-free version!

Your sugar levels should be always stable when you’re about to eat dessert. Be careful if you have eaten too much before dessert since your insulin can get to your bloodstream before your sugar does. This is due to slow digestion caused by eating too much food! So try to pace yourself and do not overeat or your sugar levels will also get out of control!

If you make 24 financiers, each one will have the following macronutrients:

1.9gr
protein
2.3gr
net carbs
0.6gr fiber
1.4gr
sugars
3.3gr
fats


INGREDIENTS

  • 1 cup or 85gr of almond flour

  • 40gr of pistachio flour

  • 1/3 cup of chopped pistachios for topping

  • 1/4 teaspoon of pink Himalayan salt

  • 1 teaspoon of baking powder

  • 25gr of coconut sugar

  • 25gr erythritol

  • 30gr of grass-fed butter

  • 1 organic egg

  • 3 organic egg whites (use whole eggs and separate the egg yolk to use it for another recipe)

STEPS

  1. Preheat oven at 350F/175C.

  2. Blend raw pistachios in a food processor until it becomes flour. Be careful to not over blend since it can become like a nut butter.

  3. In a bowl, mix the almond four with the pistachio flour, salt and baking powder. Set aside.

  4. In another bowl, beat the eggs with the butter and the coconut sugar/erythritol.

  5. Mix everything together and pour the batter in little square molds or mold of choice.

  6. Sprinkle chopped pistachios and any other topping of choice, I also added 3 sugar-free white chocolate chips in the middle to give it a sweeter touch!!

  7. Bake for 18 minutes and let them cool on a rack.


* Store the financiers in an air tight container at room temperature for 1 week (if they last that long!)

Conocéis los Financiers? Son unos bizcochitos típicos de Francia hechos con almendra molida. Los hay de varios tipos y los de pistacho son mis preferidos!

He creado una versión más saludable, sin gluten, sin lácteos y sin azúcares refinados. Espero que os gusten!

Si te salen 24 financiers, cada uno tendrá los siguientes macronutrientes:

proteína

carbs netos
0.6gr fibra
1.4gr
azúcar
3.3gr
grasas


INGREDIENTES

  • 1 taza o 85gr de harina de almendra

  • 40gr harina de pistacho (pistachos triturados)

  • 1/3 taza de pistachos en trozos para topping

  • 1/4 cucharadita de sal rosa del Himalaya

  • 1 cucharadita de bicarbonato sódico

  • 25gr de azúcar de coco

  • 25gr eritritol

  • 30gr de mantequilla de vacas de pasto

  • 1 huevo ecológico

  • 3 claras de huevos ecológicos (separar y aprovechar las yemas para otra receta)

PASOS

  1. Precalentar horno a 175C.

  2. Triturar los pistachos en una trituradora hasta que se convierta en harina. Cuidado con triturar demasiado ya que se puede convertir en una consistencia como la de mantequilla de fruto seco.

  3. En un bol mezclar harinas, sal y levadura. Reservar.

  4. En otro bol, batir los huevos con la mantequilla y el azúcar.

  5. Mezclar todo junto y verter en moldes cuadrados pequeños.

  6. Añadir trozos de pistacho por encima, se puede añadir unas pocas pepitas de chocolate blanco que le dan un toque riquísimo! Yo hundí en el medio 3 pepitas de chocolate blanco sin azúcar.

  7. Hornear 18 minutos y dejar enfriar en una rejilla dentro del molde.

* Conservar en un recipiente hermético a temperatura ambiente durante 1 semana
(si es que llegan!! Seguro que los coméis en menos días!)
