CLASSIC CHOCOLATE CHIP COOKIES

I made these delicious and healthy chocolate chip cookies and we eat them the same day….do not do that! At least eat them in 2 days right? Now I have to bake again…!

DIABETIC DIET TIP

These delicious and healthy chocolate chip cookies are made with almond flour and brown rice flour or oat flour (I have tried both and they both work). They have more carbohydrate content than other healthy cookies recipe I have made before, like these pistachio cookies or these lemon shortbread cookies, check all the COOKIE RECIPES HERE.

Remember to always check your glucose levels before eating and make sure they’re stable between 80-110mg/dL. If you make and eat these healthy cookies make sure to calculate how much insulin you should shot per cookie, considering there’s also a high fat content, so you avoid any possible sugar spike.

The macronutrients on these healthy cookies are pretty good, if you make 12 big cookies, each one will have:

158kcal
3.5gr of protein
12.5gr of net carbs
1.9gr of fiber
3.8gr of sugar
10.5gr of fats

Take into account these numbers are calculated if using sugar-free chocolate chips and instead of 75gr of coconut sugar alone, I mix 35gr coconut sugar with 40 erythritol.


INGREDIENTS

  • 85gr of almond flour

  • 100gr of brown rice flour or oat flour

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon pink Himalayan salt

  • 90gr grass-fed butter or coconut oil

  • 80gr coconut sugar or erythritol (you can do 40gr coconut sugar and 40gr erythritol to lower the amount of sugar in the cookies)

  • 1 tablespoon vanilla extract

  • 1 egg

  • 1/2 cup dark chocolate chips (preferably sugar-free)


STEPS

  1. Pre heat oven at 350F/175C.

  2. In a bowl, mix the almond flour with the brown rice flour, baking soda and salt.

  3. Melt the butter or oil and mix with the coconut sugar, vanilla and egg.

  4. Mix everything together and add the chocolate chips.

  5. Scoop the batter on a tray with parchment paper. I had batter for 12 big cookies.

  6. Bake for 15 minutes and then let them cool in a rack.


* Store them in an air tight container at room temperature or fridge.

Estas galletas XL están deliciosas! He querido hacer la clásica versión de galletas con pepitas de chocolate negro en versión saludable! Y os aseguro que quedan deliciosas! Es una de mis TOP 3 recetas sin duda!!

No llevan gluten, ni lácteos ni azúcares refinados :)

Los macronutrientes de estas galletas están bastante bien. Si te salen 12 galletas grandes, cada una tendrá:

158kcal
3.5gr of proteína
12.5gr of carbs netos
1.9gr of fibra
3.8gr of azúcar
10.5gr of grasas

A tener en cuenta que estos valores están calculados a partir de haber usado pepitas de chocolate sin azúcar añadido y además en vez de utilizar solo los 75gr de azúcar de coco, los he dividido usando 35gr azúcar de coco y 40gr eritritol.


INGREDIENTES

  • 85gr de harina de almendra

  • 100gr de harina de arroz integral

  • 1/2 cucharadita de levadura

  • 1/2 cucharadita de sal rosa del Himalaya

  • 90gr de mantequilla de vacas de pasto o aceite de coco

  • 80gr azúcar de coco o eritritol (puedes dividir la cantidad y usar 40gr de azúcar de coco y 40gr de eritritol para disminuir el contenido de azúcar)

  • 1 cucharada de extracto de vainilla

  • 1 huevo

  • 1/2 taza de pepitas de chocolate negro (sin azúcar, mejor)


PASOS

  1. Pre calentar el horno a 175C.

  2. En un bol, mezclar la harina de almendra con la harina de arroz, bicarbonato sódico y sal.

  3. Derretir un poco la mantequilla y mezclar con el azúcar de coco, vainilla y huevo.

  4. Mezclar todo junto y añadir las pepitas de chocolate negro.

  5. Con una cuchara normal o de helado, poner la cantidad deseada para cada galleta en una bandeja con papel de horno. A mí me han salido 12 galletas grandes.

  6. Hornear durante 15 minutos y dejar que se enfríen en una rejilla.

* Conservar en un recipiente hermético a temperatura ambiente o en la nevera.
