HEALTHY COCONUT PROTEIN ICE CREAM / BEN&JERRY'S STYLE
Unbelievable!! Here’s a delicious and healthy recipe to eat ice cream at night while watching your favourite series or movie!
As long as you like coconut you’re good haha.
This healthy coconut ice cream recipe with protein cookie dough is vegan, gluten-free, refined sugar free, dairy free and low carb!
I have always liked the classic Ben & Jerry’s Cookie Dough ice cream, who doesn’t??
So I decided to create a healthy version of the ice cream to have at home for me to snack on! The protein cookie dough is made with vegan vanilla protein powder, almond flour and some chocolate chips. Amazing!
The ice cream part is made with coconut milk and sweetener of choice, I used yacon syrup but any syrup would work!
DIABETIC DIET TIP
This healthy coconut ice cream is the perfect healthy sweet snack to have always handy! You can eat it at any time of the day, AS LONG AS your blood sugar levels are stable (not above 140 mg/dL). As a diabetic, this is a great option for when you are in the ice cream mood since it contains the necessary ingredientes to make this healthy recipe a great choice for anyone with Type 1 or Type 2 Diabetes.
Since the protein cookie dough balls are sweetened with stevia from the protein powder, and the ice cream is sweetened with yacon syrup and mixed with coconut (healthy fats), the Glycemic Index (GI) on this ice cream is great and won’t certainly spike your sugar levels like any other refined ice cream out there would.

INGREDIENTS
For the ice cream:
▪️1 can coconut milk of 13.5oz/400ml (leave in the fridge overnight and use only the thick part)
▪️1 can coconut cream of 13.5oz/400ml (leave in the fridge overnight and use only the thick part)
▪️1/3 cup or 50ml yacon syrup or syrup of choice or honey
For the cookie dough:
▪️1 cup or 100gr of vanilla protein powder
▪️1/3 cup or 30gr of almond flour
▪️2 tablespoons of melted coconut oil
▪️Some chocolate chips
STEPS
▫️In a bowl, mix all the cookie dough ingredients together and form little balls. Keep in the freezer.
▫️In a food processor or a hand mixer, blend the coconut milk, coconut cream and syrup.
▫️Pour the batter on a bowl or desired shape mold and add the protein cookie dough balls.
▫️Freeze at least 3 hours and keep in the freezer.
* Store the ice cream in the freezer for up to 6 months.

Helado vegano de coco con galleta proteica!
Imitando la versión del típico cookie dough de Ben&Jerry’s pero sin gluten, sin lácteos ni azúcares refinados y con sabor a coco!
INGREDIENTES
Para el helado:
▪️1 lata de leche de coco de 400ml (dejar en la nevera durante la noche y usar solo la parte firme, no la líquida)
▪️1 lata de crema de coco de 400ml (dejar en la nevera durante la noche y usar solo la parte firme, no la líquida)
▪️1/3 taza o 50ml de sirope de yacón o cualquier sirope deseado o miel
Para las bolitas proteicas:
▪️1 taza o 100gr de proteína de vainilla
▪️1/3 taza o 30gr de harina de almendra
▪️2 cucharadas de aceite de coco
▪️Unas pocas pepitas de chocolate
PASOS
▫️En un bol, mezclar todos los ingredientes de la galleta y hacer bolitas. Dejarlas en el congelador.
▫️Triturar la leche de coco con la crema de coco (usar solo la parte firme, no la liquida) y el sirope de yacón. Añdir un poco del líquido de la leche de coco si está demasiado espeso.
▫️Una vez todo bien mezclado, verter en el molde deseado y añadir las bolitas de galleta.
▫️Congelar almenos 3 horas y conservar en el congelador.
* Conservar en en congelador hasta 6 meses.
