HEALTHY ALMOND & COCONUT PROTEIN COOKIES

Today I’m sharing these healthy almond and coconut high protein cookies that turned out really yummy!!
They’re gluten-free, refined sugar free and dairy free! They can also be vegan if you substitute the egg for a flax egg or equivalent.

These healthy protein cookies are very easy to bake and require only a few ingredients. The healthy ingredients you will need can be easily found at any grocery store or maybe you already have them at home! I also like that this healthy high protein recipe requires less quantity of each ingredient (so it is a money saving recipe). I actually made them quickly yesterday afternoon, and I made 6 cookies.

Just a single cookie makes you feel so full! I love that as well!

Each cookie (from 6 cookies) has the following nutritional facts:

8.1gr protein · 7.3gr carbs · 3.8gr fiber · 6.5gr sugars · 13.1 fats

DIABETIC DIET TIP

I love the macronutrients of these healthy high protein cookies, they are very nutritious! They have the enough content of carbohydrates, healthy fats and protein to make this healthy recipe a must-try! Besides, they’re high in fiber and also contain vitamins and antioxidants!

One or two of these healthy high protein cookies are the perfect mid-morning or afternoon snack that will nourish you and keep you on track with your healthy eating habits! And surely it won’t spike your sugar levels as long as you have stable levels (around 80-120mg/dL) before consuming these healthy high protein cookies.

Also, if you can combine these healthy high protein cookies with a yogurt, the combo is truly amazing! Plus, the healthy fats on yogurt will also help slow digestion and won’t create a sugar spike!

healthy coconut flour

INGREDIENTS

  • 1/3 cup or 40gr of coconut flour

  • 1/3 cup or 30gr of almond flour

  • 1/4 cup or 35gr of coconut sugar

  • 1/4 cup or 30gr of vanilla protein powder

  • 1/4 teaspoon of pink Himalayan salt

  • 30gr of coconut oil

  • 1 organic egg

  • 30gr dark chocolate 80% for the topping


STEPS

* You have a step by step video above this page.

  1. Pre heat oven at 350F/175C.

  2. Mix all the ingredients together until fully combined, except the dark chocolate.

  3. Make balls and shape them into round cookies.

  4. Bake on an oven tray with parchment paper for 12-15 minutes and let them cool in a rack.

  5. Once completely cooled, cover half of the cookies in melted dark chocolate and let them cool in the fridge for some minutes.

    * Feel free to add any toppings, I sprinkled some black sea salt that I still have from my trip to Iceland last year!


    * Store the cookies in an air tight container in the fridge, they will be crunchy!

Galletas proteicas de almendra y coco! Sin gluten, sin lácteos ni azúcares refinados.
Una de las cosas que más me gusta de esta receta, es que ya una sola galleta te llena y te deja satisfech@! Decirme con qué galletas procesadas ocurre eso?? Siempre quieres comerte todo el paquete… a quien no le ha pasado!

En esta receta salen 6 galletas, cada una proporciona:

8.1gr proteína · 7.3gr carbs · 3.8gr fibra · 6.5gr azúcares · 13.1 grasas

INGREDIENTES

  • 1/3 taza o 40gr de harina de coco

  • 1/3 taza o 30gr de harina de almendra

  • 1/4 taza o 35gr de azúcar de coco

  • 1/4 taza o 30gr de proteína de vainilla

  • 1/4 cucharadita de sal rosa del Himalaya

  • 30gr de aceite de coco

  • 1 huevo ecológico

  • 30gr de chocolate negro 80% para bañar la mitad de la galleta


    PASOS

    *Tenéis un video del paso a paso arriba.

  1. Pre calentar el horno a 175C.

  2. Mezclar todos los ingredientes juntos hasta que queden bien integrados, menos el chocolate negro.

  3. Hacer bolitas y darles forma de galleta.

  4. Poner en una bandeja con papel de horno y hornear unos 12-15 minutos.

  5. Dejar enfriar en una rejilla y una vez completamente frías bañar la mitad de las galletas en chocolate negro derretido y dejarlas en la nevera unos minutos.

    * Podeis añadir el topping que queráis, yo he añadido un poco de sal marina negra que aun tengo de mi viaje a Islandia del año pasado!

* Conservar en un recipiente hermético en la nevera así seguirán crujientes!
