In today’s post I am sharing with you this healthy and yummy chocolate-rich brownie-muffins! It’s a melt in your mouth kind of healthy treat… delicious!

Needless to say…they´re gluten free, refined sugar free and dairy free!!

It has double chocolate content, the cacao powder and the dark chocolate chips. I believe a healthy brownie should always have chocolate chips or chunks besides the cacao powder to make it extra rich and yummy, so these muffins as well!

If you saw the live I did this past Saturday you know how easy and delicious these can be!

DIABETIC DIET TIP

These healthy double chocolate brownie muffins are made with almond flour, coconut oil, eggs, cacao, coconut sugar and erythritol. Thanks to the healthy fat content, the presence of the low amount of sugar won’t cause a spike on your blood sugar levels. However it depends on how many chocolate chips you add and of what kind. I always try to use the darkest chocolate chips possible, but it depends also on who is going to eat that brownie!

Yield - 12 muffins
Duration - 1 week or 3 months in the freezer


The macronutrients of these healthy brownie muffins are pretty good! If you do 12 muffins each will have:

protein
9.8gr
net carbs
2.8gr fiber
4.9gr
sugars
10gr
fats

* You can achieve more protein content if you add 1 scoop of protein powder.


INGREDIENTS

  • 1/2 cup or 30gr of cacao powder 100%

  • 1/4 teaspoon of pink Himalayan salt

  • 1/2 teaspoon of baking soda

  • 1/2 teaspoon of baking powder

  • 50gr of coconut sugar or date paste

  • 50gr erythritol or date paste

  • 3 organic eggs or flax eggs for a vegan version

  • 1 tablespoon of vanilla extract

  • 60gr dark chocolate chips (preferably high cacao content or sugar-free)

  • 40gr of coconut oil (melted)

  • 1/4 cup or 60ml almond milk or milk of choice


STEPS

  1. Pre-heat oven at 350F/175C.

  2. Mix together almond flour, cacao powder, salt, baking soda and baking powder. Set aside.

  3. On a separate bowl, melt the oil and mix well with the eggs, coconut sugar, erythritol, milk and vanilla extract.

  4. Pour the dry ingredients (step 2) into the wet ingredients (from previous step) and mix until fully incorporated.

  5. Add the dark chocolate chips to the dough, mix and place the batter into a muffin tray.

  6. Bake for 15 minutes and let them cool in the molds outside the oven.


* Store in an air tight container at room temperature or freeze them for 3 months.

Si este pasado fin de semana te uniste al live que hice en IG entonces ya sabes lo fácil y rápida que es esta receta saludable de brownie-muffins!

No llevan gluten ni lácteos ni azúcares refinados. Además pueden ser veganos si substituyes los huevos por huevo de lino.

Los macronutrientes de estos muffins saludables son los siguientes, si os salen 12, cada uno tendrá:

* Puedes conseguir más contenido proteico si añades 1 scoop de polvos de proteína.


INGREDIENTES

  • 1/2 taza o 30gr de cacao en polvo 100%

  • 1/4 cucharadita de sal rosa del Himalaya

  • 1/2 cucharadita de levadura en polvo

  • 1/2 cucharadita de bicarbonato sódico

  • 50gr de azúcar de coco o eritritol o pasta de dátiles

  • 50gr de eritritol o pasta de dátiles

  • 3 huevos ecológicos o huevos de lino para versión vegana

  • 1 cucharada de extracto de vainilla

  • 60gr pepitas de chocolate negro (mejor si son sin azúcares añadidos o con alto contenido de cacao)

  • 40gr de aceite de coco derretido

  • 1/4 taza o 60ml de leche de almendra o la que quieras


PASOS

  1. Pre calentar el horno a 175C.

  2. Mezclar la harina de almendra, el cacao, levadura, bicarbonato sódico y la sal. Reservar.

  3. En otro bol, derretir el aceite de coco y mezclar con los huevos, el azúcar de coco, eritritol, leche y vainilla.

  4. Verter los ingredientes secos del paso 2 en los ingredientes líquidos del paso anterior. Mezclar hasta que quede bien incorporado.

  5. Añadir las pepitas de chocolate negro, mezclar y verter en moldes para muffins.

  6. Hornear unos 15 minutos y dejar que se enfríen en los moldes.

* Conservar en un recipiente hermético a temperatura ambiente 1 semana o 3 meses en el congelador.
