Healthy chocolate chip banana bread.... AKA slices of heaven!!
This healthy banana bread is gluten free, refined sugar free and dairy free!
I also created a step by step video so you all can see
how easy is to make it so you can also make it home!
OMG! I have made quite a few Banana Breads over the past years and this is one of the best I’ve made so far! In flavour, in consistency and in everything else..!
I love to bake with bananas! It’s a great ingredient to use on healthy baking as a sweetener. Do you use them often? It also gives moisture to the cake, loaf or muffins you may bake!
Every time I make healthy banana bread I slice it and freeze it, this way anytime I want a slice of something sweet I unfreeze a slice of this delicious healthy banana bread with chocolate chips!
DIABETIC DIET TIP
Remember those moments when your blood sugar is starting to go down around 80-90 mg/dL or so and you need a bit of sugar? A piece of this banana loaf would work perfect!
By eating a slice of this treat you will nourish your body instead of drinking a bottled orange juice, sugary soda or white sugar packed with refined sugars and empty calories!! Besides, since it’s made with almond flour, your blood sugar will rise slightly and steadily without a spike!
* Note: the information above is suggested when dealing with 80-90 mg/dL blood sugar, not a low sugar condition below 70mg/dL.
The macronutrients of each slice if you get 8 slices are the following:
(using only almond flour - see recipe below)

12.3gr net carbs
3.9gr fiber
5.6gr sugar
14.6gr fats
(using almond flour and oat flour - see recipe below)

7.6gr protein
21.2gr net carbs
4gr fiber
6.8gr sugar
11.6gr fats

Prep - 5 minutes
Bake - 40 minutes
Ready in - 10 minutes (let it cool)
Yield - 8 thick slices
Duration - 1 week
INGREDIENTS
2 cups or 180gr of almond flour (you can also use 1 cup of almond flour and 1 cup of brown rice flour or oat flour but if so, add another banana to the mix!)
1 tablespoon of ground cinnamon
1 teaspoon of baking powder
1 teaspoon of baking soda
1/4 teaspoon of pink Himalayan salt
2 Bananas (use 3 bananas if adding brown rice flour or oat flour)
2 eggs
1/3 cup or 35-40gr of coconut oil
1 tablespoon of vanilla extract
Chocolate chips, the amount you prefer! I used around 60gr and sugar-free
STEPS
Pre heat oven at 350F/175C and grease a 8inch/16cm rectangle mold or cover with parchment paper.
In a bowl, mix the almond flour, cinnamon, baking soda, baking powder and salt. Set aside.
Blend the bananas and mix with vanilla extract, eggs and coconut oil.
Add the dry ingredients from step 2 and mix everything.
Add the chocolate chips as desired and pour the batter into the mold.
Bake for 40 minutes and let it cool on a rack before serving.

La verdad que está delicioso, pero decirme vosotros que os parece!
ADEMÁS no lleva azúcares refinados ni añadidos, ni gluten ni lácteos! Está endulzado con el azúcar natural de los plátanos.
Los macronutrientes de cada rebanada si te salen un total de 8 rebanadas son:
(con sólo harina de almendra)

Porción - 8 rebanadas grandes
Conservación - 1 semana
INGREDIENTES
2 tazas o 180gr de harina de almendra (puedes usar 1 taza de harina de almendras y 1 taza de harina de arroz integral o avena integral pero entonces añade otro plátano también!)
1 cucharada de canela en polvo
1 cucharadita de bicarbonato sódico
1 cucharadita de levadura
1/4 cucharadita de sal rosa del Himalaya
2 huevos ecológicos
2 plátanos (añade otro plátano si usas harina de avena o arroz)
1/3 taza o 35-40gr de aceite de coco
1 cucharada de extracto de vainilla
Pepitas de chocolate negro al gusto, la cantidad que queráis. Yo he usado unos 60gr y sin azúcares añadidos
PASOS
Pre calentar el horno a 175C y engrasar o usar papel de horno para un molde de 16cm.
En un bol, mezclar la harina de almendra, canela, levadura, bicarbonato sódico y sal. Reservar.
Triturar las bananas y mezclar con el extracto de vainilla, huevos y aceite de coco.
Mezclar todo junto y añadir pepitas de chocolate al gusto.
Hornear durante 40 minutos y dejar enfriar en una rejilla antes de servir.
