HEALTHY CREAM CHEESE FLAN
Hello food lovers!
Merry Christmas! If Covid wasn’t here, I would usually spend it in Argentina or Spain with my family since I would travel there for Christmas but we have to spend it here in the US!
So this healthy dessert is a great idea to bring to your Christmas lunch or dinner. It’s a spanish cheese flan and it’s a melt-in-your-mouth version of a creamy and healthy dessert!
It is indeed gluten free, refined sugar free and also low carb because the ingredients are pretty much eggs, cream cheese, cream, little bit of coconut sugar and very little syrup.
DIABETIC DIET TIP
Since the ingredients on this healthy dessert are mostly low carb, this healthy flan is a great option to have anytime of the day! For Christmas dessert ideas, this healthy flan can be a great choice. It only has 5 ingredients: eggs, cream cheese, cream, yacon syrup, coconut sugar and vanilla extract (which actually doesn’t count as an ingredient…)
The healthy fats of the eggs, cheese and cream will certainly compensate the sugar content from the coconut sugar and won’t cause you a sugar spike as long as your blood sugar levels are stable between 80-120 mg/dL. It will also depend on what other ingredient you want to add to your flan portion. I personally love some strawberries, but only a few since the sugar content of fruits is still sugar!
Remember to always eat in moderation. Enjoy but in moderation, that’s key to a balanced healthy lifestyle!
INGREDIENTS
4 organic eggs
8oz/250gr organic cream cheese
450ml coconut cream or heavy cream
1/2 cup or 70gr of coconut sugar
1 tablespoon of vanilla extract
2 tablespoons of yacon syrup for the “caramel” or syrup of choice or caramel/toffee
STEPS
Preheat oven at 350F/175C.
Beat the eggs with the vanilla extract, coconut sugar and cream until well combined.
Spread the syrup in the bottom of a 10inch/20cm rectangular mold.
Pour the filling over the syrup and bake in water-bath for 50 minutes.
Let it cool and place in the fridge overnight.
Remove from the mold and enjoy!
* Store in the fridge for 1 week.

Feliz Lunes, a tan solo 1 día de acabar el año, os traigo la versión sana del clásico flan de queso para que lo podáis hacer en casa para la cena de final de año, que os parece?
Este flan de queso saludable está hecho con sólo 5 ingredientes, sin gluten y sin azúcares refinados!!
INGREDIENTES
4 huevos ecológicos
250gr queso crema ecológico o de vacas de pasto
450 ml nata o de coco
1/2 taza azúcar de coco
1 cucharadita extracto de vainilla
2 cucharadas de sirope de yacón para el “caramelo” o el sirope que quieras o caramelo
PASOS
Precalentar horno a 175C.
Batir todos los ingredientes juntos.
Esparcer el sirope en la base de un molde rectangular de 20cm.
Añadir la mezcla al molde y hornear al baño maría durante 50 minutos.
Dejar enfriar y ponerlo en la nevera hasta el día siguiente.
Desmoldar y devorar!
* Conservar en la nevera durante 1 semana.
