CHOCOLATE COVERED CASHEWS


What’s your favorite nut to snack on for a healthy snack??

We love all of them actually! Probably my favorites are pistachios and cashews!

We have been snacking on cashews lately so I thought to cover them in dark chocolate, because… chocolate!!

I have to say though… in order to make this healthy snack, it took me quite some time to cover them one by one. So if you’re in a rush, I would recommend to make the bar version instead of covering one cashew at a time (both bar version and single cashew version are shown on pictures below and above). Both versions of this healthy snack recipe are delicious, just one is faster than the other so I leave it up to you to decide!

You will only need 2 ingredients, or 4 if you prefer to make this nut snack more nutrient dense and with your own chocolate instead of just melting chocolate chips.

This makes the perfect gluten free, dairy free, refined sugar free and vegan snack!

DIABETIC DIET TIP

This healthy snack is a great option any time of the day or as a dessert! It contains healthy fats from the cashews, coconut oil and cacao powder!
It is always better to use the darkest chocolate possible, the one with more % of cacao amount overall, since it will contain less sugar.

So in this case, I used 70% dark chocolate chips (and they come sweetened with cane sugar) but I added 100% unsweetened cacao powder to increase the amount of pure chocolate and I didn’t add any sweetener. You could add a little bit of stevia if you need to, only a taste preference.

If you follow this recipe as indicated, you won’t need to worry about any sugar spikes and you will get to enjoy your healthy antioxidant-rich snack!

INGREDIENTS

▪️1 & 1/2 cup or 200gr of raw cashews
▪️1 cup or 150gr dark chocolate chips
▪️1/2 cup or 40gr of unsweetened cacao powder 100%
▪️2 tablespoons of coconut oil


STEPS

  1. In a bowl, melt the dark chocolate chips with the coconut oil and add the cacao powder. Mix until everything is combined.

Option A - Cashews covered in chocolate:

  1. Throw some of the cashews in the bowl with the melted chocolate and make sure they are fully covered in chocolate.

  2. Grab one by one with a fork and place on a tray with parchment paper. Refrigerate.

  3. Repeat the process if you want to have a thicker layer of chocolate.

Option B - Dark chocolate and cashews bark

  1. Chop the cashews into pieces and set aside.

  2. Cover a tray with parchment paper and spread half of the melted chocolate on it.

  3. Throw the chopped cashews on top and then cover them with the rest of the melted chocolate.

  4. Leave in the fridge until it hardens and then break into big pieces to snack on!

🇪🇸 Spanish:

Anacardos cubiertos de chocolate negro! El snack perfecto que contiene grasas saludables de los anacardos y antioxidantes del cacao!

Un snack sano, sin gluten, sin azúcares refinados ni lácteos!

INGREDIENTES

▪️1 & 1/2 taza o 200gr de anacardos crudos ecológicos
▪️1 taza o 150gr de pepitas o trozos de chocolate negro
▪️1/2 taza o 40gr de cacao puro en polvo 100%
▪️2 cucharadas de aceite de coco

PASOS

  1. Derretir las pepitas o trozos de chocolate negro con el aceite de coco y añadir el cacao en polvo. Mezclar bien hasta que quede bien integrado.

Opción A - Anacardos cubiertos en chocolate negro.

  1. Añadir algunos anacardos y mezclar hasta que queden bien cubiertos de chocolate.

  2. Con un tenedor, sacar uno a uno y colocar en una bandeja con papel para horno. Dejar en la nevera hasta que endurezcan.

  3. Repetir el proceso si se quiere tener una capa mas gruesa de chocolate.

Opción B - Tableta de chocolate negro con anacardos

  1. Trocear los anacardos.

  2. Poner papel de horno en una bandeja y esparcir la mitad del chocolate derretido.

  3. Esparcir los trozos de anacardos por encima y verter el resto de chocolate por encima.

  4. Dejar en la nevera hasta que endurezca y romper en trozos grandes para tener como snack!

* Conservar en la nevera.
