Perfect for something sweet, healthy and delicious in the mornings! These healthy Mocha Donuts have great macronutrients, almost no sugar content and a boost of energy thanks to the coffee and chocolate!

Cafeine can cause sugar spikes, this is why is important to consider eating these healthy Mocha donuts in the morning and when your sugar levels are stable or about to drop! The combination of healthy fats and low sugar will not cause any major sugar spikes :)

The macronutrients of these healthy Mocha Donuts are pretty good! If you make 5 donuts and cover them in sugar-free dark chocolate but use coconut sugar, each one will have:

INGREDIENTS

Mocha Donuts:

  • 85gr almond flour

  • 1/3 cup or 25gr cacao powder

  • 2 tablespoons espresso powder or finely ground coffee

  • 1/2 teaspoon baking soda

  • 1 large egg

  • 25gr coconut sugar or erythritol

  • pinch of salt

  • 80ml almond milk or milk of choice

  • 1/2 teaspoon vanilla extract

Chocolate glaze:

  • 50gr dark chocolate (at least 85% or sugar-free)

  • 1 tablespoon coconut oil

  • 1/2 teaspoon espresso powder or finely ground coffee


STEPS

  1. Pre heat oven at 350F/175C. Spray a donut tray with coconut oil and set aside.

  2. In a bowl, mix the egg with the coconut sugar, salt, almond milk and vanilla extract.

  3. In another bowl mix the cacao powder, almond flour, espresso powder and baking soda until fully combined.

  4. Add the previous dry ingredients to the wet ingredients from step 2.

  5. Transfer the batter to the donut molds, dividing the batter among 4-6 cavities.

  6. Bake for 8-10 minutes and let it cool in the mold for 10 minutes, then transfer to a rack to cool 10 more minutes before covering with glaze.

  7. In the meantime, prepare the glaze by melting the dark chocolate with the coconut oil and espresso powder.

  8. Dip each cooled donut into the chocolate glaze.


* Store in an air tight container at room temperature for 1 week or freeze them for 3 months.

Donuts de Café saludables y riquísimos! No llevan gluten ni lácteos ni azúcares refinados. Os va a encantar el toque de café del relleno y de la cobertura, están deliciosos!

Los macronutrientes de estos donuts saludables de café son los siguientes. Si te salen 5 y teniendo en cuenta que usas azúcar de coco para el relleno y chocolate sin azúcar para la cobertura, cada uno contiene:

INGREDIENTES

Donuts de Café:

  • 85gr harina de alemendra

  • 1/3 cup o 25gr cacao en polvo

  • 2 cucharadas de café instantáneo en polvo

  • 1/2 cucharadita de bicarbonato sódico

  • 1 huevo grande

  • 25gr azúcar de coco o eritritol

  • pizca de sal

  • 80ml bebida de almendras o bebida/leche preferida

  • 1/2 cucharadita de extracto de vainilla

Cobertura de Chocolate:

  • 50gr chocolate negro (al menos 85% o sin azúcar añadido)

  • 1 cucharada de aceite de coco

  • 1/2 cucharadita de café instantáneo en polvo


PASOS

  1. Pre calentar el honro a 175C. Engrasar con aceite de coco una bandeja de moldes para donut.

  2. En un bol, mezclar el huevo con el coconut sugar, sal, bebida de almendra y extracto de vainilla.

  3. En otro bol, mezclar el cacao, almond flour, café en polvo y bicarbonato.

  4. Añadir los ingredientes secos previos a la mezcla de ingredientes del paso 2.

  5. Transferir la mezcla a los moldes de donut, salen entre 4 y 6 donuts, depende de cuanto los llenes.

  6. Hornear durante 8-10 minutos y dejar que se enfríen durante 10 maintos en los moldes y luego transferir a una rejilla para que se enfríen 10 minutos más antes de bañarlos en chocolate.

  7. De mientras hacer la cobertura de chocolate derritiendo el chocolate negro con el aceite de coco y el café instantáneo.

  8. Bañar cada donut en chocolate y dejar enfriar.

* Conservar en un recipiente hermético durante 1 semana o en el congelador 3 meses.
