Here we are again with another sweet snack you can add to your list of delightful healthy snacks!
These are healthy peanut butter cups. Made with real chocolate, and sweetened with coconut sugar. So definitely there’s barely a sugar content in these! It’s a great snack to add to any of your meals any time of the day if you’re craving some sweet or something with chocolate flavor.
Always remember to enjoy these goodies only when your sugar is stable (80-120 mg/dL). And…ALWAYS WITH MODERATION!
Balance is key in life and also when it comes to keep great sugar levels consistently!
INGREDIENTS
2 tablespoons of coconut oil
1/2 cup or 40gr of unsweetened cacao powder
1/3 cup 50gr of dark chocolate chips or 80% chocolate bar
1/4 cup or 30gr of peanut butter
1 teaspoon coconut sugar
1/4 teaspoon pink Himalayan salt
STEPS
Melt the dark chocolate and chips or bar with coconut oil and mix with the cacao powder.
Pour a little bit on each mold of choice for the base layer, about 0.5cm (I used silicone cupcake molds) and place in the freezer for 1 minute.
Mix the peanut butter with the coconut sugar and salt. Pour in the middle of each chocolate base making a round shape, making sure it does not cover the base completely. Place in the freezer again for another minute.
Pour the rest of the chocolate on top until it covers the peanut butter completely.
Leave the cups inside the freezer until completely firm and remove the silicone mold.
* Store in an air tight container in the freezer for 1 month.

Conocéis los clásicos “cups” de crema de cacahuete? Pues esta es la versión sana y nutritiva!
Sin gluten, sin lácteos, sin azúcares refinados y veganos! No necesitáis horno, así que son fáciles y rápidos de hacer!
INGREDIENTES
2 cucharadas de aceite de coco
1/2 taza o 40gr de cacao puro en polvo
1/3 taza o 50gr de chocolate negro, al menos 80%
1/4 taza o 30gr de crema de cacahuete
1 cucharadita de azúcar de coco
1/4 cucharadita de sal rosa del Himalaya
PASOS
Derretir el chocolate con el aceite de coco y mezclar con el cacao en polvo.
Verter un poco del chocolate (0.5cm) en la base de moldes para cupcakes, yo he usado los de silicona y dejar en el congelador 1 minuto.
Mezclar la crema de cacahuete con el azúcar de coco y sal. Verter un poco en el medio de cada base de chocolate, sin que llegue a cubrir toda la base de chocolate, solo en el medio. Dejar en el congelador otro minuto.
Verter el resto de chocolate por encima de la crema de cacahuete hasta que lo cubra por compelto y quede una cobertura lisa y recta.
Dejar en el congelador hasta que queden firmes y sacar del molde.
* Conservar en un recipiente hermético y dejar en el congelador.
